Blast from the Past

Welcome all! So I thought we should start from the North of India, from Kashmir. This following piece, called 'The lure of Samovar', talks about the state, the people and the food of Kashmir. Its a must read for anyone that enjoys eating Kashmiri Rogan Josh (although the article does not have that recipe) and for anyone who enjoys food. It has a description of the history of the famous 'wazawan' and a list of the vessels traditionally used. The article talks about the difference between the cuisine of the Kashmiri Pandits and the Dogras. And last but not the least, it has a collection of recipes at the end, that, I can bet, are not available at your nearest Kashmiri restaurant.
