Of Koftas and Kebabs!

Ah! I just read this remarkably delicious article a friend sent me.
Prof. Pushpesh Pant is a true genius. Not only does he recreate the journey that the kofta has taken across half the globe, he succeeds in detailing the texture and taste of various kinds of koftas to such brilliance that I (after eating a humungous lunch) salivated throughout the article. This is the kind of writing I love....details of exotic food, its history and geography, as well as its journey, all tied up in beautiful prose.
