Alu Tamatar ka Jhol - Garhwali recipe

Another recipe from my green book, a Garhwali speciality, a basic simple potato curry recipe. Tastes great, especially recommended for potato curry lovers like me.

Ingredients:

250 grams potatoes, peeled and cut into big pieces
50 grams onions, diced
100 grams tomatoes, chopped
2 cm piece of ginger, finely chopped
1/2 red chilli powder
4-5 cloves of garlic
1/2 tsp garam masala powder
1/2 tsp turmeric powder
1/2 tsp fenugreek seeds
1 tsp cumin seeds
1 tbsp coriander leaves, chopped
2 tbsp ghee
Salt to taste
Water for cooking

Method:

1. Heat ghee in a non-stick pan. Add cumin seeds and fenugreek seeds.
2. Once the seeds crackle, add garlic cloves and chopped ginger.
3. Stir fry until garlic and ginger turn golden brown.
4. Add chopped onion and fry until tender.
5. Add red chilli powder and turmeric powder, chopped tomatoes. Fry until tomatoes become tender.
6. Add a cup of water and the potato pieces. Add garam masala powder.
7. Cook on medium heat for around 10 minutes.
8. Add 2 more cups of water and salt to taste.
 9. Cook on low heat until potatoes are tender.
10. Garnish with chopped coriander leaves.

Serve hot with parathas.
