Tex-Mex Lentil Soup

I was rummaging through my old emails and I just came across this recipe that my sister had sent me long ime back. It is basically kaali masoor (brown lentils), cooked with vegetables and spices to give it an American south-western flavour. 

Method:
1.  Boil kaali masoor with corn, carrots, cauliflower pieces, broccoli pieces, peas etc (basically any hardy vegetable of your choice) in a pressure cooker.
2.  In a non-stick pan, heat some oil, and sputter some jeera (cumin seeds)
3.  Cut up 1 large onion, 2 large tomatoes (or1 small can puree), 4-5 cloves of garlic, and 2 large green chillies.
4.  Add garlic, green chillies and onion to the oil and saute until translucent.
5.  Add tomatoes/puree and cook on low flame until the oil starts separating along the edges.
6.  Add 1 large tablespoon dhania powder (coriander powder) and 1/4th cup water to allow the dhania to cook well.
7.  Then, add the cooked kaali masoor and vegetables to this.
8.  Let it simmer on low for 20 minutes.
9.  Add some chopped green and black olives.
10. Add salt to taste, dried oregano, and cumin powder.
11. Finish off with some fresh lemon juice and chopped green coriander.
12. Serve with some warmed tortillas and a quick salad.
