Prawns Sukkhe

So my husband got this recipe from his friend Rohit Wagdhare and cooked it a few days back. He improvised it a bit and the result was just amazing - right up there with the likes of fried prawns from Highway Gomantak (which I rate as amongst the best that I've ever had). 

1. De-vein prawns and soak in water for 10 minutes.

2. Pound ginger and garlic into a paste in the ratio 1:2. The garlic should be double in quantity compared to the ginger.

3. Marinate prawns in this paste for 15 minutes.

4. Soak whole coriander seeds in water.

5. Dice onions. Heat oil in a non-stick skillet and saute onions until caramelised.

6. Add the marinated prawns and saute until prawns change colour to golden brown.

7. Add juliennes of raw, peeled raw mango and let it cook for 10 minutes.

8. Meanwhile, in a mortar-pestle, pound a little onion, ginger, garlic, fresh red chilli (de-seeded), soaked dhaniya, some diced raw mango and pound it all to a paste.

9. Add some fresh coriander and pound again.

10. Add this fresh masala to the skillet with prawns and saute. Add a bit of water once it is a little dry and saute some more.

11. Garnish with some chopped coriander. This is what it looked liked in the end.




The original recipe had kokum instead of raw mango and after step 10, coconut milk had to be added and reduced till the gravy thickened. Either way, it is a phenomenal recipe. You must try it. And, thank you, Rohit!
