I'm putting up this recipe on request from one of our readers - Rohit Waghdare, who wanted a recipe with mushrooms.
Ingredients:
1/4 cup oil
1 tsp jeera (cumin seeds)
1/4 tsp ajwain (carom seeds)
3 whole dried red chillies
2 inch piece of ginger, grated
1 large red onion, diced
1 green chilli, cut crosswise into 4 pieces
Salt to taste
2 cloves garlic, minced
1 tbsp coriander powder
1/4 tsp chilli powder
2 trays white mushrooms, sliced
1 large tomato, diced
1/2 cup tomato puree
Chopped green coriander
Method:
1. Heat oil in a large karahi. Add cumin and carom seeds. Cook until the seeds turn light brown.
2. Add the grated ginger and cook for about 30 seconds.
3. Add the diced onions, green chilli and salt. Cook until the onion turns brown.
4. Turn the heat down to low. Add the garlic, coriander powder and red chilli powder. Cook for about a minute, stirring continuously.
5. Add the mushrooms and turn the heat to medium-high. Cook until the mushrooms are cooked through.
6. Now stir in the chopped tomatoes, tomato puree and 1/4 cup of green coriander. Cook on low heat until the sauce thickens.
7. Garnish with more chopped coriander and serve hot.
